821 located on trendy, cosmopolitan Fifth Avenue South in the
heart of historic Olde Naples brings a taste of Miamis South
Beach to the Gulf Coast. Our décor is colorful, warm, soothing,
and sophisticated urban chic. We describe our Menu as Natural Fusion
blending the very best and freshest that nature has to offer! We
offer a variety of freshest Seafood, Choice Steaks, Pastas, and
award winning desserts concentrating on the finest ingredients available
daily.

Bill
Holcomb and Michele Longo
Bill and Michele both grew up in upstate New York, in the Finger
Lakes Region. Both graduated in 1989 and moved to Naples in 1990
and were married in 1997.
Billy was part of the original opening team at Bistro 821, when
it first opened in 1994. When the Bistro was sold Billy became the
managing partner of Zoë's in 1997.
During the summer of 2002 Billy and Michele had the opportunity
to purchase the Bistro and jumped on the chance. Michele, with her
personal touch and attention to details -- flowers, decorations,
and the overall layout, recreated the feel of the Bistro when it
first opened bringing back the old good feeling and pleasant atmosphere
that made it such a popular attraction on 5th Avenue. While Billy
brought together a team of Managers, Servers and Bartenders and
trained them in his way of "Taking care of the People"
Family: We have a 3-year old boy, Conor, with whom we spend
all our free time away from the restaurant. He often spends hours
in the restaurant during setup time "helping out." Our
family lives for the hospitality business. We thrive on putting
out great food, good wine, and fun every night to a friendly crowd.
Executive
Chef - Jess S Housman
I started working in the restaurant business in the mid-80's. I began as a dishwasher at A Mexican Food restaurant on Cape Cod called Sam Diego's. After a few months I was promoted to Prep Cook and then quickly promoted to Line Cook. As soon I got on the line and got thru my first night I was completely hooked. After working in several more restaurants I decided to go to Boston University and attend their new Chef Program. While attending, I worked with such chefs as Jacques Pepin, Julia Child, Todd English & Marcella Hazan. After successfully completing BU's chef Program I worked as Sous Chef at Spinazzola's Restaurant, The Chanterelle and La Alouette.
I moved to Naples and got a job at Michaels Café as sous chef. Then became the opening Chef at Bistro 821. I also helped open Bistro 41 in Ft. Myers as well as being the opening chef at Zoë's here in Naples.
